Today my drum smoker got the call to smoke 3 pork butts(34 lbs total). I wasn't going to be home for a while last night, and I don't like leaving my Pitboss unattended on my deck. I went with my basic recipe. Killer hogs rub, cherry chunks on the lump charcoal, smoked for 13.5 hours. I rested it for 2 hours then pulled and seasoned it. It's ready to vac seal now. I made it for my uncles house warming party today. Turned out pretty tasty!
