Burn it in good to start. Once it lights let it come up to whatever temp it wants to run at when first turned on. Mine was 180°. Let it sit sit there 30-45 min then increased temps every 30 min till it got to around 350° for a hour. Slowly cooled it back down to 200° for around a hour. Then turned it to high to see where it would go. Ended up at 508° then Slowly cooled it down and shut off.
Next day I tossed a butt and two rackes of ribs on and started learning how it cooked.
If you're use to charcoal/wood this is a whole different ball game. Have fun!
