Beef Ribs

So my Winn Dixie had rib roast for sale (7.99lb) I cut the ribs away from the meat cause I'm making ribeye steaks. The beef rack of ribs I've never done before I've only done pork ribs. No clue how to cook, since it's steak I assume I dont cook to internal of 195 like pork ribs??(

Okay - these are cut away from the ribeye - so those are beef back ribs.

I agree, if you haven't done them before, it's easy to assume you wouldn't cook them to high temp since you wouldn't cook a ribeye to high temp, but actually, most people will cook these pretty close to how they'd cook short ribs (plate ribs) or even pork ribs, which is to say low and slow to around 203 or so.
