Hey guys I just recently replaced the temperature probe and it seems to be working just fine. I tested the internal probe with my own ambient temp probe and they were great, although I only get the correct temps right on top of the probe. If I were to move my ambient temp probe to the center of the grill it is way off than what is set. I understand the temps will drop the closer you get to the lid but I am getting 70 to 60 degree variations not even at the front of the lid. Is there something I can do to try and get the rest of the grill up to temp? And also should say it’s never hotter Just colder

I go by grate temps. I keep temp probes beside whatever I'm cooking and raise grill temp till I gets to where I want. Might have to run the grill @ 320-350 to keep to 250-280 grate.
I’ve thought about this too, although on the other side of what I’m cooking will be way lower than the set temp. Is this something I just need to get used to and rotate whatever I’m cooking or is there something more. And would you mind elaborating on going by grate temps, I’m pretty new to this

Be careful, if the probe is to close, the mass of the pork butt will effect the temperature reading, convection oven would lessen that effect.

Good point with mass and that would support an independent thermometer around there to see what’s really going on. I place oven thermometers right under whatever’s smoking.
