Just got a Copperhead PBV4NX from Walmart. Got it all set up everything fires up but it won’t let you change or set the temperature. Will only get to around 130 degrees. Any ideas how to fix this?

Set it to a higher temp initially and see how it goes

Unplug it and check all of your connections
Pitboss has had some controller issues. Hopefully yours ain’t one

Not really familiar with that model but after looking it up, it appears you turn the dial to desired temp and then press the dial button in to lock the temp. If that doesn't work then you have a bad controller out of the box.
