Dry Ribs Question

Good morning everyone.

Instead of the usual 3-2-1 method, I want to try something new and simply smoke the ribs without any sauce, foil wrap, etc. Having never done this before, and not wanting to screw it up, any suggestions or advice would be appreciated

I usually run between 225 and 250. I check one an hour to see if it needs a spritz. I use the bend test to see if they are done. Grab the rack in the middle with tongs and bounce it a bit. If the meat on top cracks they are done.
 
I start them on smoke for half hour/45 min, then 225-250 until done. Like said above, when they start to break apart, they are done for me. Ill also check here and there with an instant read thermometer. I will pull them at 200 regardless if they break or not. Every slab seems to be different which is understandable....
