Fan Operation

When I am running my PitBoss 850 smoker the fan always runs at full speed all the time. The fan shuts down when I power the unit off (still plugged in), so it appears that the controller does have the ability to turn the fan on and off.

My question: Is this normal? Should the fan cycle when cooking, or is it supposed to run at full speed all the time?

I'm fine knowing this how it is expected to work.

I have worked on other control systems (not related to smokers) where the fan was cycled or run at variable speeds to better control temperature, so I was wondering if the fan running at full speed was the expected behavior.
