I have been smoking for years with my charcoal Orion Smoker. Great for ribs and Butt however because of its convention heat it smoked very quickly so great flavor, but not as tender as i would like.
So a friend of mine gave me his pit boss with an agreement that anytime i smoked anything I would save some protein for him.
So this is my first smoke with the electric, vertical, pellet smoker. I like the low and slow option 225 for 3-2-1 method.
My questions are…
I see smoke coming out of chimney, but it doesn’t seem like their is enough smoke inside the grill.
Do i need to put more water in?
How can I adjust the chimney to hold more smoke inside?
Which pellets smoke best?
Or should I kick back, grab a beer and not worry if it holds temp and smoke is coming out chimney?
I am inclined to kick back and trust the process…
Any response would be appreciated.
