Did spare ribs yesterday and they turned out fine. But along the way my vertical was a bit glitchy with temp stability.
The screenshot here of the graph show shows the front and backend burn off I routinely do. And for the most part the grill reached and stayed at my set temp. But there in the middle it struggled to keep it there. I just let it ride out and kept and eye on things.
It was smoking more than usual like it was in the smoke mode.
I monitor actual inside temps with oven thermometers and they reflected the dropped temp as well. They dropped down to 200-210 in that period.
Other than that it went fine the smoke session just took a little longer
