Gday mates,
New member with a brand new PB 850 here, about to toss my first brisket onto this bad boy, I’ll post some pics as I go. Wish me luck.

I should’ve got pics of the final product but I forgot.
I got a bit confused as my smoker temp is in Celsius and everything you read online is in Fahrenheit and so I ended up slightly undercooking the brisket. I mean after 7.5 hrs it was fully cooked but I think a bit lower and slower would have seen more of the fat rendered properly. It was still rather tender juicy and flavourful, but far from the quality of brisket I’ve eaten from more experienced cooks.
All up though I’m completely in love with the Pitboss navigator, so easy to use and far better quality than the el cheapo offset I started with.
