All Texas bbq is great
80-90 pound hogs are great to smoke
I bought three pot belly pigs years ago
Ground them all into sausage then smoked em.

When I was working out there in Kermit, West Texas guys I worked with did some pig hunts with knives and killed a few Axis deer. I was the only one of our crew dragging a smoker around with my RV. I saw a lot of those javelinas around the well heads we worked, never smoked one though. lol
