Kielbasa help

[Vegas Smoker]

I have made kielbasa from scratch using a Bradley smoker. I now have a pit boss Sportsman 1600, which I love. Has anyone made kielbasa using the pit boss grill? I need to get the temp low (160-165) and not sure how to do it. Any suggestions are greatly appreciated. Thanks in advance

You could start by cold smoking it first. Then starting it running on smoke mode. 180° in my case

How do you cold smoke in a pit boss?

A smoke tube in the chamber. You have to keep the smoke moving through chamber so the smoke don't get stagnant. I use a small fan.
If you wanted some low heat. You could use some coals in a pan with wood chips.
