More meat, more time?

New to the pellet-grill community, excited about my new Pit Boss 5 Series vertical. Got her seasoned and ready to go. Have a question for you long-timers out there...

So I'm planning to smoke at least two racks of baby-back ribs. I've heard that I should use a modified 3-2-1 with the baby backs, since a full six hours might be too much (so more like a 2-1-45min). Anyway, here is my question: let's assume I do two or three racks - will that affect how long I should expect the cook to go in the vertical smoker? Or will three racks be about like 1 rack, time-wise? [I plan to use thermometers, I'm just trying to get an idea of what to expect.]

One other question: is there anything wrong with doing (say) two racks on one grate (in the middle, I'm guessing) or is it always better to divide them up into multiple levels and rotating?

Final note: I wouldn't look askance at anyone who offered any other smoking advice, by the way. I'm humble and welcome wisdom.

3-2-1 method is what I use
I just load mine up and let em smoke 💨
I spray mine with apple juice before wrapping
Just make sure you clean the grill after each use including the temperature sensor and after it cools off then unplug it

321 is a good guideline but you’ll find you own way

Overall about the same. If you start with cold racks, the more racks you have will affect how quickly your unit heats up.

The number of racks per grate should not be a big deal. What will be more significantly different is the level where the racks are. At least on my vertical I get different temperatures from top to bottom.
