We are hoping to cure and smoke some hams before putting them in the freezer. We have a Pro Series smoker, and I'm aware it will do a great job on the hot smoke portion, but I need to cold smoke for 12 hours first.
Tell me what I need to do to modify our smoker to do our cold smoke, please.
