New member and new owner of a 5 series copperhead. I’m currently attempting to smoke wings and a little pork today but am having extreme difficulties with temperature regulation. This is my second smoke on this unit. First smoke was not too bad. Right now I’ve got the smoker set to 250 and it has yet to sit and stay there. Temperature drops to around 215 before the fan cuts on, then the pellets flare up and temp goes up to 330…..And the cycle continues. The fan is staying on full blast for about 2 and a half minutes, which seems way too long to me. It’s also not cutting on soon enough to prevent temp from dropping down too far. Am I missing something? I just about got mad enough to take this food off and fire up the Oklahoma Joe offset, but I desperately want this Pit Boss to work. Any help would be very much appreciated!

I am new to Pit Boss but I to have a Copperhead. I have a Masterbuilt and a GMG as well as an old stick burner.
With my PV5 it says to start with the door open, manually feed and then let the unit get a good burn going with the door open. Then after a few minutes close the door and raise the temp to 350* for 15-20 minutes(?). Then bring it down slowly.

"IMPORTANT: When selecting a low or the SMOKE setting after preheating, the auger will continue to turn and
feed pellets. This will momentarily raise the temperature, but temperature will eventually decrease and stabilize.
Remember, you are trying to regulate a fire, so time is necessary to achieve your desired temperature."


This is quote from the manual, I have been doing this but I go to 285 or so.

I do not use the app because it is weird (compared to my others). After preheat I two step down to the "S" mode. After my smoke time is done I raise the temp to 220 or what ever, and let it rock. None of my other smokers behave this way. If I use the SMOKE IT app the "SMOKE" temp is too high for my liking.

I don't know if this is helpful, but it's what works on my unit. (I fill the water pan with hot tap water with a cup of tallow/oil on top.)

Could possibly be a controller issue
Call pitboss support
If you have trouble getting through try first thing in the morning
I’ve always had luck doin that.
