I have had three cooks so far, and they have been awesome, but I did overcook my pork tenderloin last week because I set the MPC probe to 145 degrees and watched the football game. I went to check on it, and my meat had reached 180 degrees and the smoker was still cooking at 350 degrees. Isn't it supposed to go to low heat when it reaches the desired set temperature on the MPC probe? Is there something I am missing?

Yes that’s how it is supposed to work. I’ve used that a couple of times and it kicked it into a warming hold upon reaching the target temp.
 
I never used mine like that, I monitor the internal temperature on my phone and another Wi-Fi thermometer.
