New user wood chip question

Hi all just bought a pit boss 3 gaz vertical smoker and while I'm a beginner I think I can control the temperature well but I'm really puzzled concerning the wood chips burn time and replacement process. So here's my questions:

-Lets say I dont wanna get too much of a smokey taste, my wood chips last 45 min to one hour and then I want to just leave my pork loin or wathever bake afterwards, do I empty the wood chip tray or it doesnt matter to leave the ashes there for the remaining baking time?
-Lets say I want to add chips, is it better to empty the burned ones or I just add on top of them?
-How can I tell they are done burning do they need to become white ash or as soon as they are black but still solid (with no smoke emanating)?

Welcome from Texas to the group!!
As an old stick burner I’d just add less chips so when they burn up there’s no more smoke
You’ll be able to tell when it quits smokin
