Pellet discusion.

I don't buy any pellets that don't say on the bag exactly what is in them!!
I like Bear Mountain Oak, Kingsford Hickory, Weber Hickory, Lumber Jack Char Hickory, they all say what is in them.
what is a hickory blend? mesquite blend? what are they blended with if the bag doesn't say?
some of the old Pit Boss pellets are 100%, I still have some left over Pit Boss 100% Apple from Walmart but I can't find them anymore,
and they smell like apple pie when you are using them!
So I try to only buy pellets that say 100% the wood they are made of. no blends etc...
 
I've been using Pit Boss brand pellets. Hickory is great. Competition is pretty good. Cherry is amazing. Not a real fan of Apple.

I can tell you that Competition blend is way to strong for cold smoking cheese. Going to try cherry next time (on a smaller batch of cheese).

I get the Pit Boss Applewood pellets at Walmart. They had all varieties last time I was in there, except they were out of Competition Blend.

Hmmmm, I havent even thought about smoking cheese, I have only smoked beef, pork 'n' chicken, lard & tallow.

I'm going to try it. From what I understand after you cold smoke it you need to wrap it and leave it in the fridge for a few weeks to mellow out. Otherwise it will taste like an ash tray.

Yes.

I vacuum sealed the cheeses that I smoked, and intentionally didnt touch them for 2 full weeks. (that was hard....)

Opened up the Pepper jack that I smoked first. Really strong smoke flavor. Overpowered the cheese. letting it sit in the fridge in a regular baggie now for a while longer. Next I opened the munster cheese. Again, cheese lavor completely overpowered by the smoke. Also resting a bit longer in a baggie now. Next I opened the mild cheddar. The smoke flavor was strong, but not overpowering. I since grated some up and put on my scrambled eggs. THAT was delicious. Waiting longer on the other cheeses, to maybe let them settle a bit more.

Yea I changed to smoke house you can buy them at Sam's club it has no bark
Or binders was really impressed when I emptied the bag yesterday there was very little dust in the bottom
Luv the 50/50 hickory and oak
 
Where do you get Binders?
I guess some pellets have something added to hold the pellets together but the smoke house brand says on the bag that it a 100 percent wood with no additives or binders or bark.and I had hardly any dust in the bottom of my bag I was really impressed. And my wife even said that the food had a better taste I had been using the lowes brand
