as long as the fittings work and the pressure is in spec for the griddle, you're probably okay. What Cowboy1955 said. Some devices can be touchy, my guess is that a PB griddle can likely do both, possibly with some different temps at different settings (but hopefully pretty close).

All has to do with the orifice size, propane is a smaller size orifice because it's under more pressure and burns hotter than NG. With the correct NG orifice it'll work fine.
