All you have to do is change the orifice to NG
I purchased a Dearborn heater for my mower shop and switch it to propane
Works great

as long as the fittings work and the pressure is in spec for the griddle, you're probably okay. What Cowboy1955 said. Some devices can be touchy, my guess is that a PB griddle can likely do both, possibly with some different temps at different settings (but hopefully pretty close).

All has to do with the orifice size, propane is a smaller size orifice because it's under more pressure and burns hotter than NG. With the correct NG orifice it'll work fine.
