Hi,

I recently purchased a pit boss smoker in Australia and have had a lot of issues with the smoker getting to and maintains any temperature. It seems to only maintain the temperature around 20 degrees Celsius below the set point, but every now and again will briefly reach the set point temp before dropping back down 20 degrees.

I had a lot of issues reaching 180 degrees Celsius for the initial burn off, with the smoker reaching the set point and then dropping the temp way back down again consistently.

I’ve just set it up to try it again and am having the same issue no matter what temperature I try to run the smoker at.

I’m using good quality wood pellets that my friends use (who also use pit boss smokers), and as the smoker is brand new it should not require any maintenance. They have all mentioned that their vertical Smoker reaches and maintains temperature with only a small amount of fluctuation with temperature, but for some reason I have a lot of issues with mine.

What can I do to rectify this?

This issue may best best posed to tech support. Cowboy might get on here with some insight.
Is the smoke stack Open and free flowing? Is there a "puck" formed in the crucible? Vacuum this out and add three handfuls of fresh pellets and restart... I have a vertical and always start this way.

First question I have is how often do you clean it thoroughly including the temperature sensor?
I clean mine after each time I cook on it
By cleaning the temperature sensor with a sponge and dishwashing liquid it stops temperature swings.
Another thing is once you fire it up let it settle in on the temperature before putting meat on it.

It got down to 9 degrees back in December here. I was needing 250 degrees but cranked it up to 350 degrees
Once it settle in I turned it back to 250 degrees and it held.
Hopefully this helps you 🇺🇸🇺🇸
