Hello, I am new to forum. I have a pit boss Austin xl, so far love it! I have done tritip chickens, brisket, turkey, pork butt, etc. my question is this, when cooking pork ribs using the 3,2,1 method, it seems as though the bottom of the ribs get too charred as it is too close to the heat source. Does anybody else have this problem? If so how do I fix it? Has anybody modified their smoker so you can raise the main cooking grates?
