I just got my smoker. Should I put water in the water pan? Is it necessary? Cooking two butts Saturday and some sausage. If I run water in the pan will it mess up my crust on my butts?
 
I’ve seen on YouTube that you must use the water pan to keep your tempetures from going crazy

I always use water as I think it keeps the meat moist throughout a long cook. How did the butts come out?
 
I think it’s more to prevent flair ups, I’ve let the water on get empty on long cooks and it’s been fine with holding temps.
