Flank steak with pesto , s&p, roasted red peppers & cheese pinwheels for the win

Gotta have the recipe. This is one of my wife’s favorite dishes. She gets them pre prepared at the grocery store and cast iron pan cooks them on stovetop
But I’m seeing an excuse to have a PB intervention

Lay the flank steak out on parchment paper and pound it to desired thickness

S&P

1 jar of pesto spread over entire steak

Spread roasted red peppers

Sprinkle cheese over steak

Crisscross bamboo skewers

Slice 1 1/2 “ thickness

250 degrees until you reach 135 internal temperature for medium rare
