Summer sausage smoking

I just bought a series 3 vertical gas smoker. Has anyone smoked summer sausage on them? I plan on making a venison summer sausage next weekend.

I plan on starting at 120 degrees for and hr and then 140 for 2hrs then jump to 180 till internal temp hits 152.
