Temp fluctuation

I’ve had my pit for a year or two and the temp has always fluctuated high and low. Up to 75 hi and 35 low. Any suggestions. I just cleaned it and set it on 200. It ran up to 315 then came back down to 275. The 315 was probably due to having to prime the fire box. I may have over done it. But it settled at 275 and will fluctuate from there. Can’t seem to get a handle on it. The instructions don’t explain much.

Where are you measuring that temp fluctuation? On the PB controller or a different grill probe?
