We stopped at the local smoke house today to grab some brisket for dinner. Some of the best I've run across.

His ribs are a LOT better than the brisket, and the brisket is killer.

some of the home built units work better than a store unit .I have seen some stuff used by road side cook that would blow your mind just massive

Whenever we go to a smokehouse I like to nose around to find the outside cooking area. The folks are always welcoming spectators.

Mike's rub is heavy with black pepper and comes out great. 730 this morning I tossed a pork shoulder in for tonight. I'm giving it a try. Montréal Steak Seasoning, Cajun Blacking Spices, Garlic powder and heavy ground black pepper.

We will see.

This is what I started with. It's WORK to cook on but damn it's fun to use a beast like this. It'll hold 75 or so butts. About 5 years ago the new boss let us buy our Old Hickory, it works like a giant pellet grill.

Ii have a little more than a year and a half left of a 2.5 year wait on a Shirley fabrications 24x60 reverse flow off set trailer. I can't wait to play with that beast!
