I have a 18 pound turkey. Everything I've read says it's best not to smoke it whole, but to either spatchcock or completely cut it in half. What would be the best way? If recommending spatchcock or cutting it half, what temperature and how long to smoke it for?
 
I prefer whole. Tried spatchcock and did not like. I use a modified Traeger maple syrup brined recipe. Smoke at 225 with pecan pellets. Inject under skin unsalted butter on breasts and thighs. 13 pound takes about 7 hours usually. I have a 14 pound in the freezer waiting for Thanksgiving.
