Vertical Pellet smoker

Hello all. Just joined up. Just bought a pit bos vertical pellet smoker pro series 4. The temp range is 150-450, but I have been thinking about smoking cheeses. I believe you to keep it at 90 degrees F or lower. Am I going to be able to accomplish that somehow on my smoker? Any suggestions would be great.

There are several cold smoke generators available to attach to any smoker. Masterbuilt MB20100112 is one I have used. I smoked salmon and mahi-mahi using Alderwood chips. It performed pretty good.
 
Look for smoke tubes on Amazon. I have a large one (5-6 hrs) and a small one (2-3 hrs) Either one was $10-$13 ea.
I use this in my Lockhart on each cook, based on how long I will be cooking, and use an accent smoke (typically Apple) to add to my normal recipe of pellet mix in my hopper.
