Vertical smoker series 5 copprrhead

Hi all. I am a new Pit Boss smoker owner. I have read that the S setting will control the temperature between 180-225. I tossed in some baked beans to smoke and fired it up. After an hour the temp was only 140. Is this slow ramp normal on that setting?
 
I have the PBV4PS2, and I always thought smoke setting was 180 deg. Thursday I got schooled, when I took it out of S the next temperature was 130 deg. I'm thinking S has to be around 120-125 deg.

Mine was 140. I found some info that says use the S setting just starting the unit up. Then after smoke appears close door and set to cook temp.

Many will use the S mode for an hour or two for more smoke flavor, then adjust the temperature to the desired degree for what you're smoking.

This is good info... perfect for smoking fish (or cheese).
 
I have the Copperhead series 3. The S setting is pretty low, typically less than 180. I think mine hovers 140-150.
