Congratulations!!!Update on how mine came out.....it was amazing! Best I have ever had. Will never cook one any differently again.
6 hour total cook meat was tender and full of flavor. Used 1 smoke tube that burned the whole cook with a combo of apple and cherry pellets. Used meat church gospal and gunpowder grill your ass off Seasonings for great bark. At the 4 hour mark put it in a tin foil pan with broth and Jameson black label whiskey and some dirty bird seasoning and covered for 2 more hours then let it rest for 30 minutes.
