1150 Pro PS2 - Extreme temp issues. Controller maybe? Beyond frustrated

I recently (last week) purchased a PB1150PS2 from Lowes. My Vertical 4 series on memorial day weekend decided to call it quits, needed a new part, and I was looking at this one for a while now. So I pulled the trigger. Since buying the 1150PS2 I've had nothing but temp issues and I've tried everything I can think of. It refuses to somewhat regulate. I took out the stock diffuser plate, there was a 50 degree hot spot in the center above the sear plate.

To "Try" to fix the hot spot over the sear plate, I bought the Smoke Daddy OEM Diffuser (10g steel). Smoked ribs on it, half were overdone and the hot spot was somewhat normal, but the other sides of the grill were much warmer.

So I tried the Smoking Like A Boss heat deflector. That is where it all went downhill. Since installing the heat deflector, the control board will show 155 degrees, when the probes I set all around the grill were showing 254, 228, 190, 224. Nowhere near stable. So this morning I figured I'd try the Smoking like a boss flame tamer instead of the Smoke Daddy one. It made zero difference what so ever. Last night with the 10g diffuser and the deflector, I let it go for an hour. The control board eventually showed 230, but the internal probes were showing 295-315.

I don't know if it's even worth it to call Pit Boss and go through the new control board / temp probe. I'm at my wits end, nothing seems to be working and it's just over a week old. Considering returning the thing to Lowes and going with another brand.

I had a similar experience with camp chef. Wildest temp swings right out of the box. replaced parts from warranty. Nothing would make that smoker hold temp. I got a refund and purchased a pit boss.
