1st cook on new Pit Boss Pro Series 4 Series Vertical Smoke

I cooked a couple of St Louis racks from Costco.
I tried the 3-2-1 method. I got a nice smoke ring, but no where close to "fall off the bone tenderness"
1.5 hours @180, then 2.5 hours at 230.

Any suggestions?
Ribs are overcooked if they are falling off the bone, so it sounds like you did good.
 
I usually cook my ribs at 250 St. Louis ribs have more connective tissue so a higher temp will only shorten cook time. I don’t always remove the membrane either I think it makes for a juicer rib.
