3-2-1 Rib Question

I wrap my ribs at around the 2 1/2 to 3 hour mark depending on how the smoker holds temp. I spritz with 50/50 apple juice and apple cider vinegar. When i wrap in foil, it is meat side down. I put some butter, brown sugar and some of the spritz mixture in the foil on both sides. Back on the smoker for another hour or so, then unwrap and glaze with BBQ sauce for about 1/2 hour.

I only do Back ribs. The side ribs we get here are not that good. very fatty and lots of gristle.
