Did a spatchcock turkey a while back. Even the wife said it was the best ever. Make sure to let it rest in the fridge with your rub at least 24 hours before throwing it in the pit. Put rub under the skin as well. Back bone makes awesome brothWhole or cut up?
Stuffed & smoked 22 lb bird. We’ll NEVER go back to the oven. Butter, salt & pepper. Rotate & butter spray every 45 min. Using apple pellets. The stuffing is awesome as well. I repeat: we’ll NEVER go back!! Enjoy all!!My wife and I decided against the ole turkey this year and just feel like doing some pulled pork...maayyyybe do a brisket also.
