Ive never used it before but read and seen it on grilling shows I watch at night and it mad brisket look really good as far as a good bark goes plus I'm retired and I love to cook barbecue. And brisket and pretty much anything else I can cook on my pitboss and my family is my best critic but it must be getting pretty good because my daughter asked me would I help her cook around 100lbs of Boston butts next month for her church. At the time I bought the biggest horizontal I could get and I take the top rack out I also bought my daughter and son in law a smaller one for Christmas. She figured several butts because a man I new who has since passed who catered told me to figure a pound per person even though every one is not going to eat a pound but it was really embarrassing to not have enough so that's what ive always went by but she can put 2 maybe 3 on hers and I can do the rest. I'll get them ready the day before stick them in the church fridge in metal pans wrapped. Put on unwrapped around 9 the next night smoke for4 hours then wrap them again and put them in aluminum pans and cook for another 10 then take em off an letem rest for 45 minutes or so then srWow, you'll be busy smoking for a few days. I'm just going to try it on brisket because I do us foil on butts an it works great. But you're right about the price differenceThere are some good comparison videos on youtube showing foil vs butcher paper, and butcher paper does win. Having said that, it may be one of those things where it's a "what is it worth to you" situation. If you're doing a TON of smoking, and are really going through the stuff quickly, you're tacking on a good bit of money when a roll of butcher paper is about $10 for 75' and foil is about $2.50 for 75'. That's literally 4x the price. Just something to think about.
