The Lockhart is advertised as a cold smoker but in 50 degree weather the lowest that I could keep it was 110 which is too high for cold smoking. By filling a couple of aluminum bread pans with ice and abutting them up against the back wall, sitting on the drip pan, I was able to maintain the temp below 80 and cold smoke cheese.
