I suggest a good overnight brine. I make a strong "tea" of the flavor profile I want, cool with ice and then brine overnight, pat dry then let it set out in a cool, airy spot until a pelicule forms. Then smoke as desired.
Spatchcocking or halving the birds works best for me.

I'm more of a dry brine guy. +1 on the spatchcock approach.

Definitely a good price on Amazon if you're a Prime member. This is at most of the box stores near me. Walmart, Food Lion etc.

Here is a simple one that I use - AND you know what's in it.

Poultry Brine Injection
2 tablespoons kosher salt
1 tablespoon sugar
4 cups water or low sodium chicken stock, or a mix of both
