I did my first spatchcock chicken on my Lexington. Chicken turned out amazing. I seasoned it with a Memphis Sweet BBQ seasoning I got at the dollar store, then thinned out some sweet baby Rays that I moped it with every 30 minutes for the last 2 hours. I cut too much when I cut the spine out because my leg quarters were completely separated with just the skin holding them on.
