Foil or Butcher Paper?

This roast was wrapped in butcher paper for 2+ hours. It was the end of a 5-hour cook on my brand new Pit Boss 850 which I got yesterday (2/23/24).

It was placed on the grill at 250 until the IT hit 155. I removed, wrapped, and let it roll for another 2 hours. I then removed it, set it in my oven for 45 minutes before serving.

It was amazing!

Hey Slider, looks like you know what your doing. At 155 yiu wrapped and smoked another 2 hrs then oven (at 225?) For 45 minutes, what temp was it when you took it off after the wrap @ 155?
