How do I smoke? 850 pro series

Bought a 850 pro series. For the life of me I can’t get it to smoke. Searched for info and videos online and can’t get anywhere. There is no p button. How do I get it smoking at a low temperature for hours? I’m so confused. We came from a traeger that smoked fine. My husband is ready to return the thing. What am I missing?

When you turn it on it will display an S which stands for smoke and should run at 180 on that setting.

Also there is not a P setting on the 850. It has a PID controller.
