Is Overnight Refrigeration Good After Seasoning?

Not to make you overthink it, but you could throw it on tonight. Lol. Here's the graph from the pork butt that I was talking about earlier. I started it at 11pm the night before.

I took your advice and placed the ham on the PB at 9 am EST. I set it at 230° F and will let it roll for about 6 hours. I have all of my probes in as well.

Times and temps look similar to the cook I did. Took 14 hours @ 250 to hit 170 degrees. I also season overnight in the fridge. I believe that adds quite a bit of time to get to temp. Here's the cook I'm referring to.
 
Final results.

It came out amazing! The total cook time was 9 hours. I let it eat for about
45 minutes
