Not to make you overthink it, but you could throw it on tonight. Lol. Here's the graph from the pork butt that I was talking about earlier. I started it at 11pm the night before.

That particular graph is from my Meater thermometer. My Wi-Fi inkbird temp probes also do some nice graphs and help me track some of my cooks. What app do you use to get this info?
Good call on running it at 250. That should make sure he hits his dinner time.I season and wrap in saran wrap.
I'd start around 8:00 and run around 250 grate temp till I liked the bark then wrap.
Times and temps look similar to the cook I did. Took 14 hours @ 250 to hit 170 degrees. I also season overnight in the fridge. I believe that adds quite a bit of time to get to temp. Here's the cook I'm referring to.Not to make you overthink it, but you could throw it on tonight. Lol. Here's the graph from the pork butt that I was talking about earlier. Did you try letting it burn for about 5 minutes outside the cooker, and then blowing out the flame?I'm having trouble with the smoke tube. It lights but 80% of the pellets ever ignite
