Wow Pip when i read your Post i felt as if i knew you personally because my kc combo suffers from each and every thing you mention plus my temp prongs stopped working after the second smoke. the helmet that moves the grate fell out during first smoke. the grate brush definitely has no use in this smoker great idea but has never worked.
Sparky you can’t be serious with your solution. stick something into the ash and stir it up through the topside?
i’ve learned that after a long smoke the bottom of the meat is going to be black and rock solid. a cheese grater has helped me to get past the burnt part of the meat. the middle of the smoker is definitely much hotter than anywhere else.
my thought is that next time i need a smoker i’m gonna buy a smoker not a combo unit this thing looks amazing and says all the right things but at the end of the day i can’t just fire it up and smoke a piece of meat without worrying the entire time.
