I ended up cutting it into 3. Here's a picture of 1 of them sliced. The other 2 will be used in a chili. I ran at 250 with only SPG and hickory.I have a 10 lb chuck roast planned. I'm trying to decide if I'm going to cook it whole or cut it into 2 smaller ones. It's quicker and easier to cut it but I like staying up for an overnight cook.View attachment 4605

Invaluable for those overnight cooks. I can set the grate temp probe with a high and low temp that alarms on my phone which also sets off my watch. Luckily I had a nice night of uninterrupted sleep. Wel except when my old a$$ had to pee.And the necessary tools of the trade
