If it is a Pit Boss Smoker, there is a door at the rear you can open and let them come out into a 5 gallon bucket or buckets. Use a long stick to get as many out of the hopper as possible, there will be some left on the augur which will get used up during the heat up for your next smoke.

Can anyone tell me how I can change the type of pellets in my smoker or do I have to use whats in the hopper before I can change to a different flavor of pellets

There should be a door on the back of the hopper. Get a 5 gallon bucket, put it under the little door and they will fall into the bucket. You can't get all of them but will get most out.
