PB700 heat problems

IMO, don't worry too much about it. Only temp that really matters is the temp in the meat. When it is done, take it off. It's easy to get worked up when you have a bunch of data but the reality is that grills have existed a long time without all these sensors and people cook good BBQ without them. You'll never find a grill with perfectly distributed heat that doesn't fluctuate.
 
thanks for weighing in. Been Leaving it at least 30 to 45 minutes after the display reaches desired temp. As far as the air gap goes, this model has one
try the biscuit test and see what you get. I have the burn pot cover but it is to wide and my sear plate sits on it but it still works great. I made one like the last one in the post and it worked perfect but it was aluminum and after cooking I turned the grill up to burn off the grates not thinking of the temp and it actually melted! After the biscuit test I figured out what to do to make it even temp in the smoker and it works great now. Now my temp is just the same or 10 to 15 degress different which is better than most.

Good point. Sometimes I like having slightly different temps if I need to speed up or slow down different parts of the cook. I kept the brisket point toward the hotter side and the flat on the cooler side. On the other hand, when I'm doing several racks of ribs, I'd like a little more consistency.
 
I did this on my PB700. I plugged the holes and added the smoke stack. The temperature still fluctuated although I think it did help some. One thing I found is if the temperature prob is dirty it reads incorrectly and seems to lead to the grill to be hotter then it should be. There is still temperature swings no matter what I did.

Was thinking about this also. Would like to hear from someone who has actually done it on a Pb700
I have a 700Pb that I plugged the holes, added stack, used sealing tape around door, and added shelf. Temp. swings still exist due to the pellets absorbing moisture in the air. They will burn at different rates. this is not a gas grill or an electric oven. The mods I did gives you better control. Keep your pellets dry in a sealed container.
