PB850PS2 temperature increments

I’m glad I’m the not the only one who is disappointed in the lack of 25° adjustments on this PRO850. A chuck roast recipe called for cooking at 375° and I had anxiety all afternoon trying to move it between 350 and 400. Also, the meat probe they included did not work at all. I quit using the SmokeIt app altogether.
I’m going to clean out the insides today, but the last two times I shut it down I experienced smoke coming out of the hopper box while the fan was still on. I immediately emptied the hopper. Is this something?
 
Maybe some density is a P setting? Not sure if these new controllers have a P setting.
No P setting on these new PID controllers
the S setting for smoke, I'm not sure what that's for cause there is no temp control, it varies between 165 and 225.
the manual does not say anything about this setting, or Smoke Density Control
 
I clean out the hopper after I am done with the grill for the weekend and clean ALL the pellets from the auger also.
Living at the beach is very damp and I don't want any damp pellets in there for the next cook.
I would rather prime the thing every time than leave wet pellets in there.
I also vacuum out the hopper, the auger tube and the fire box and pit.
I might get a de-humidifier to leave in the main barrel to keep it dry when not in use.
never had smoke in the hopper.
 
there will be no P setting on a PID controller and the controller are set to 25 degree change until you hit 300. Someone made a statement on not having a 375 and I rather have 375 than 275 personally.

There's no 275
Should be 25 degree increments all the way up!
