Just got the 1150 yesterday and attempting to to the burn off has been very frustrating.

The main display starts out fine when beginning the warm up process. Leave the flame broiler open until the roar begins. Then let it default to the 350. That's where things start to go south. The main display will start to jump 100 degrees and go all over the place while the Temps above the grates never get no where near that and after an hour this is where I am at....
It has the updated PID controller. As you can see from the picture I have a total of 4 probes going. The first two are from all the way left of the Smoker and the the last two are in succession to the right. (Every grate has a probe)
Is this normal? Or is this a dud?

I closed it after the smoke dissipated and the fire was going. Should that remain open to reach 350?

Currently I have all the probes above the grates and in order to attempt to reach 225 for smoking I had to keep slowly raising the temp to eventually 300 degrees. Should the temp above the grates be that far off from the set temp? Am I over analyzing this too much? It's 65 degrees here atm.

I think when I first had my 1150 I had to keep it at 275 for 225 grate temp. It seemed like it got better after I used it a few times. I also installed the smokes like a boss mod by the controller probe on the left. Supposedly it keeps the hot air from being forced up to the probe. It seems like that helped out. Now I’m about 20 degrees off now. From the controller to grates temp. With the far right being the hottest and the left by the probe a lot closer to the controller temp.
 
Just ordered one. Thanks for the information. Doing my first smoke for a party this Saturday and I'm trying to be as prepared as possible. Between yesterday and today, I've spent almost 12 hours getting to to know the Temps. So I have the best shot at having it dialed in.

Remember to throw the clock away when smoking, go by tenderness and internal temperature.

So this is what the temp seems to be around with my controller at 180 with the heat deflector mod.
Looks good. I'll report back once I get it installed. Today was a success. 7lb butt Set to 260 had 237 degrees with swings from 229 to 241. Started at 3am. Pulled out at 1:15pm. Room temp butter.. No wrap with two hour rest in butcher paper and towel in oven. Everyone was very impressed. Thanks for all the information on this forum :)
