Pit Boss Pro 850 won't reach temp

I have a PB 850 Pro and while I LOVE this pellet grill, it seems never to be able to reach the desired temp (it's still new - only 4 months old). Living in SE Texas, the temps outside are pretty mild this time of year. I've cleaned the unit, opened the stack so that I have between 1/2" and 1" of clearance, use PB wood pellets, everything I can think of, and I am STILL about 25 deg. off. (it is currently 74 deg. here and I have my grill set to 350, but it will only reach about 325-328 after running for over an hour).

Any suggestions?
 
Have you checked with a separate thermometer? Pit Boss probes are known to be off 25-50 deg.
No, I should probably try that first then. I did a test and cranked the heat up to 375, but it still stayed around 325 or so. I'm wondering if the grill probe is dirty. Would that cause symptoms like this?
