So I WAS planning on smoking a 5 to 7 pound Prime Rib, but that seems to have changed and now I am smoking a 11.2 deboned Prime Rib. <Wish family would talk to me before buying something different than was discussed> That aside for now. If I am cooking at 250 to 275F with an 11.2 pound Prime Rib, am I looking at about a 5.5 to 6 hour smoke? Am I doing the math right?

I found this awhile back as a general guide - 15 min per lb. 225 internal temp 135° chef temp / I have a 7 bone choice 21.86 lbs it will tale me 5.5 hours to cook at 225. I plan on 250 until internal temp is 125 then rest for an hour wrapped and buttered then stick in an oven at 500 for 10 mins to crisp the outer side. I have been watching a lot of videos and guys are more concerned with internal temp than the time. I going to guess its going to take me at least 4 hours.

Boneless I would solely rely on internal temp not time. at 11.2 lbs for 15 min per pound the math is 2.8-3 hours.

There is also another guide that says 225-250° 12-20 min per lb. internal temp 125-145° again for me at 225-250 4.5 hours I want chef internal temp

I am a believer in a Thermo Pro TempSpike or similar unit. These calculate cook time remaining.
Then always allow for long rest what ever method you use!
