Pro850 and Pro1150??

A smoke 2 is an external probe set that is made by thermoworks. If you go to their website you will find it. And yes you would use it in place of the pit boss probes. Thermoworks products are a bit pricey but very accurate.

i'm a big fan of the thermoworks smoke, but i'm good with two probes, others want four. i think it was $99 on fathers day a year ago.

i also wanted to add that after a big day of 3 different cooks i performed a clean out in my 850. there were more ashes than i expected inside the furnace, and less than expected in the tub of the grill. i didn't find it that invasive to perform the complete shop vac clean out, remove grates and the diffuser plate. was done in 5 minutes tops.

if you need the cooking space, there's no argument against the larger version, i'm good with the 850 for cooking space, and overall footprint on the patio.

everyone has different needs, etc.

Smoke 2 has 2 probes while Thermoworks also makes a model with 4 probes. I use one probe to measure the smoker temp and the other as a meat probe.. love the accuracy which I have double checked with an ice bath and boiling water. The main unit reads at the smoker and a remote unit is also provided.
 
I have a Thermoworks Smoke, and a Smoke X4. They are both great. The "X" model has a longer range transmission for the remote, and the X model will run a fan called a billows for ATC on a coal smoker. I use the billows on my BGE.

TW probes are larger than than the PB probes and would not fit through the factory hole. I enlarged the hole in the side of my 820 pro for the probes to fit, and used a traeger grommet I bought off amazon to seal it up. A few pics here:

 
In my opinion, the grill you bought is great as is and no mods are needed. Probes are also very accurate, and I have no problems at all with the app whether I'm at home or not. Here's more detail on my experience in the month I've owned and experimented with my PB1150PBS.

When I originally tested the temps, I was too impatient and thought the probes should heat up as quickly as the sensor. When they were still 30+ degrees lower than the set temp after 15 minutes, I figured something was wrong, but actually the plug in probes are much thicker and therefore they take more time to get to temp, but they get there and hold it beautifully.

I tried the smoking like a boss heat deflector mod, and my experience was that the deflector caused more of a problem than it solved. Before the deflector, my actual temp was about 30 degrees lower than the display indicated, but after the mod, the actual temp was over 70 degrees higher than the display temp.

I tried the grill two more times with the mod in place, and the problem persisted. After about twenty minutes, the display temp was barely moving, and the interior temp kept on climbing. When I tried to set at 300, the display took forever to get there, and the interior of the grill was 411 degrees. Shut it down, let it cool and tried for 250 on the next attempt. The display reached 250 fairly quickly, but the inside of the grill was at 325 and climbing, so I shut it down, let it cool and removed the mod.

I then set the grill to 250 and put one probe on the left half and one on the right half of the grill and waited about a half hour or so for things to level out. With the display reading 250, I had 248 on the left side probe, 249 on the right, and all temps remained steady. Turns out my grill was perfect right out of the box. No mod needed.

The mod seems to have been helpful for the older model widebody Pit Boss grills, but I can say 100% in no uncertain terms that if you have a new PB1150PS2 with the latest controller, you do not need or want the mod. Here's the readout after the shield was removed.

i haven't even used the probes that come with the grill for meat temps. i'm just used to having to use the thermoworks.

old habits die hard, i came from a traeger.
All four of my PB probes are within +/- 3° of my inks . I use them regularly I just don't look at them though the app.
The other four will send me a audible alert. So I know to see what's going on if I'm sleepin or drinkin.
 
View attachment 2633I bought my Thermoworks Smoke X4 and it was the best $200 I ever spent. I use an air probe on each end of my grill and then I have 2 meat probes I can use.This was my initial run to see what variances I had in the new grill. I still get about a 20°difference side to side.
Nice, but I am more than happy with my Thermopro TP 20 and TP17. Is the Thermoworks $200 because of the instant read technology?

i used the PB meat probes for the first time this week. they were +/- 1F, usually under 1F difference.

which could have just as easily been the area of the tri tip since they weren't in exactly the same place in the meat.

pretty amazed by this myself from a stock probe set up. well done pit boss.

Couple more weeks will be one year using mine and all probes still reading close enough to trust. (8)
I just cain't trust the app to not change my grill temps if I'm away from home and check temps on phone.

the thing i hate about the ap is how long it takes to load every time i want to check temps.

Yep 3 different times. First time I ever used app had to run some errands had the smoker running on smoke. (180) S When I got to my first stop I checked my temps with app all looked good. Twenty something minutes later I checked again and the Grill temp was 280 and climbing. It was still set to S but it was adding coals to the fire luckily my son was home. It was up to 350 and still showed S as the set point when he reset it. Duplicated it again later and uninstalled app on phone. Then it did it one more time and I thought it was possibly instead of the app. Then I remembered the app was also on my tablet so I deleted it and it runs great set manually. I use my Inkbird IBBQ-4T to monitor temps and it will also alert me when high or low set points are met. All 4 of my PB probes are +/- 1.5 degrees of the 4 Inkbird probes. So I can use them if I need more than 4
